For as long as I can remember, my eyes have sparkled with a love of dining and cooking. From the Shortbread, Yoghurts and Piperade of my Mother «Ama», to the kitchens of the Department of Relations of the French National Assembly, where Pascal Clement was the Minister, and where I was Head Chef for the first time. From the restaurant «la Marée» in Paris where all of the Gotta held to the precision of the cooking and the minute detail of the seasoning, acquired from Mr Gérard Vie at the Trois Marches in Versailles, the desire to look beyond the harmony of flavours, brought out thanks to Mr Pierre Gagnaire, and the rigourous work of those alongside me at the Bristol;
All of those Chefs, and through them
all those producers, farmers, fishermen who strengthened me in my choice of quality in excellent products. Thanks to them I am delighted to welcome you, along with Virgine my Alter Ego «the Mistress of the house» into our «Home» at La Feuillantine restaurant
